Why you should drink milk when you eat something spicy

I have always ask a lot of whys and was never satisfied with “because everyone said so” or “it has been this way for a long time”. I found that many people, even experts know the hows but not necessarily the whys. Perhaps that’s why I like to read. Books provides answers nobody around me could give.

Last night, I found out why milk is said to be better than water to ease your throat of the sensation of spiciness when you eat chilli: capsaicin (a chemical found in chili which causes the sensation of burning) is fat soluble.
